This exceptional Caturra lot begins with a 50-hour anaerobic fermentation, where the cherries are fermented in a low-oxygen environment to develop greater sweetness, complexity and clarity. The coffee is then carefully sun-dried on raised beds in controlled conditions until it reaches the ideal moisture content, preserving its vibrant fruit character and balanced finish.
Produced by the Nasa Wesx Indigenous Community in Gaitania, Tolima, this coffee reflects generations of knowledge and a deep respect for the land. The community is committed to sustainable farming practices and environmental stewardship, with all of its coffee certified organic.
