Roast & Flavour profiles
LIGHT - MEDIUM ROAST
Roasted to preserve Sidama Bona’s bright fruit character and floral complexity. The lighter development highlights juicy mandarin acidity and fresh blueberry sweetness, while the slightly deeper finish adds balance, body and a smooth, rounded structure without introducing heavy roast flavours.
Cup Profile
- Body: Light to medium, silky and tea-like
- Acidity: Bright, juicy and citrus-led
- Sweetness: High, with ripe blueberry and mandarin sweetness
- Finish: Clean, floral and lingering, with a refreshing fruit character
Best Brewing Methods
- Pour Over (V60): Best overall. Highlights the mandarin acidity, blueberry sweetness and delicate floral finish.
- Chemex: Produces a very clean, tea-like cup with refined citrus and floral notes.
- AeroPress: Creates a balanced, sweet brew with slightly more body while retaining its fruit character.
- Filter Coffee: A smooth, approachable option that keeps the coffee bright, aromatic and easy-drinking.
- Espresso: Produces a lively, fruit-forward shot with concentrated blueberry sweetness and sparkling citrus acidity.
Best served black to experience its full clarity and complexity. For the strongest expression of its tasting notes, choose a V60 or Chemex.
Description
Sidama Bona is grown by Nare Ware, who has spent 20 years carrying his family's farm forward by farming regeneratively, intercropping food and other crops for natural shade and cultivating genetically diverse Ethiopian heirloom landrace varieties, all nourished by his own compost in place of chemical fertilisers.
Only the ripest red cherries are handpicked and dried slowly on raised beds over 20 to 25 days, preserving a cup bursting with mandarin, blueberry, and delicate floral notes.
